The heart of the stunning Sapphire Coast is undoubtedly the town of Merimbula, located on the edge of a bay and lake. Famous for their incredible fresh oysters farmed right on the edge of this bustling coastal village, Merimbula is an ideal spot to explore the beautiful coastline for a weekend.

With some of the best places to eat in the region, sparkling seaside views, incredible local seafood and only a short drive in any direction to explore the whole Sapphire Coast – Merimbula is a must-stay town.

Two of my favourite spots to eat are in this one town – sophisticated Valentina and the best burger in the country: Dulcie’s Cottage.

Super chic Mediterranean interiors and an incredible contemporary coastal menu (and killer wine list!) – Valentina is stunning. The whole experience is divine, I cannot recommend this place enough.

The incredibly chic wine bar – Bar Superette – is the perfect spot to enjoy incredible wines, unbelievably unique and delicious snacks, and stock up on your favourites wines and charcuterie to take home. Absolutely not to be missed!

And no visit to Merimbula is complete without a visit to Dulcie’s Cottage for their life-changing burgers. Add in a spicy margarita and this spot is unbeatable.

Coffee overlooking the lake by day and cute wine bar by night – Sunny’s Kiosk is such a delightful addition to Merimbula. This little neighbourhood kiosk has it all (including boat hire) and champions seasonal produce and super interesting wines with a story to tell.

HILLCREST MOTEL

Perched overlooking beautiful Merimbula –the Hillcrest Motel has retro bones, but tasteful modern upgrades making it the perfect spot for a restful stay on the Sapphire Coast. Incredible staff greet you upon arrival, and there’s a tennis court, pool, and a sunny breakfast room/sunset bar with lovely oceans views to enjoy. Hillcrest combines the 70s charm with understated elegance – a contemporary gem of a stay!
